Preparation
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, whisk together sour cream, eggs, garlic powder, onion powder, salt, and pepper until smooth.
Layering
- In a greased 9×13 inch baking dish, layer half of the roasted chiles, followed by half of the Monterey Jack cheese and cheddar cheese.
- Pour half of the sour cream mixture over the cheese layers.
- Repeat the layers with the remaining chiles, cheeses, and sour cream mixture.
- If using, sprinkle breadcrumbs on top for added crunch.
Baking
- Bake in the preheated oven for 25-30 minutes, or until golden and bubbly.
- Let cool for a few minutes before slicing and serving.
Notes
Serve this dish warm, pairing well with a fresh salad or tortilla chips. You can also serve salsa or guacamole on the side for extra flavor.
