  • 6-8 pieces roasted green chiles (peeled, seeded)
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 4 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping) For added crunch

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, whisk together sour cream, eggs, garlic powder, onion powder, salt, and pepper until smooth.
Layering
  1. In a greased 9×13 inch baking dish, layer half of the roasted chiles, followed by half of the Monterey Jack cheese and cheddar cheese.
  2. Pour half of the sour cream mixture over the cheese layers.
  3. Repeat the layers with the remaining chiles, cheeses, and sour cream mixture.
  4. If using, sprinkle breadcrumbs on top for added crunch.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until golden and bubbly.
  2. Let cool for a few minutes before slicing and serving.

Notes

Serve this dish warm, pairing well with a fresh salad or tortilla chips. You can also serve salsa or guacamole on the side for extra flavor.
