Ingredients
  

Main Ingredients
  • 2 medium green apples, chopped
  • 2 ribs celery (with leaves), chopped
  • 2 cups fresh baby spinach
  • 8 sprigs fresh parsley, stems removed, chopped
  • 1 medium cucumber, peeled and chopped
  • 1 tablespoon minced fresh gingerroot
  • 1 cup unfiltered or filtered apple juice
  • 1/4 cup fresh lemon juice
  • 2 tablespoons raw honey Can be substituted with maple syrup for a vegan option
Optional Toppings
  • Sliced or chopped cucumber
  • Sliced or chopped apples
  • Minced fresh parsley
  • Additional celery leaves

Method
 

Preparation
  1. Place all ingredients except toppings in a blender.
  2. Cover and process until blended.
  3. Pour the mixture into chilled bowls.
  4. Top as desired with your favorite toppings.
  5. Serve immediately.

Notes

Use cold ingredients for a fresher taste. Smoothies are best enjoyed fresh, but they can be stored for up to a day in an airtight container in the refrigerator. Stir before serving as ingredients may separate.
