Ingredients
  

For the cake
  • 2 cups matcha green tea powder Use high-quality matcha powder for the best flavor.
  • 1 cup sugar
  • 1 cup flour
  • 1/2 cup milk Can substitute with almond milk or coconut cream.
  • 1 cup white chocolate chips Consider using dark chocolate for a richer taste.
  • 3 pieces eggs
  • 1 teaspoon vanilla extract Add almond extract for more flavor if desired.
  • 1/2 teaspoon baking powder
  • 1 pinch salt
For the mousse
  • 1 cup heavy cream
  • 1 cup matcha powder Used for flavoring the mousse.
  • 1/2 cup sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and line a baking dish.
  2. In a bowl, mix the matcha powder, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together eggs, milk, and vanilla extract. Combine with the dry ingredients.
  4. Melt the white chocolate and stir into the batter.
  5. Pour into the prepared baking dish and bake for 25-30 minutes.
Mousse Preparation
  1. Whip the heavy cream until soft peaks form, then fold in matcha powder and sugar.
  2. Allow the cake to cool completely before layering with the mousse.
Serving
  1. Serve chilled, garnished with extra matcha powder or chocolate shavings.

Notes

Best enjoyed within three to four days. Store in an airtight container in the refrigerator.
