Ingredients
  

Meat Filling
  • 1/2 lb ground beef or chicken
  • 1/2 small onion finely chopped
  • 1 clove garlic, minced
  • 1 tbsp olive oil for sautéing
Pancake Mixture
  • 2 cups mashed potatoes preferably thick
  • 1 large egg
  • 1/2 cup flour

Method
 

Preparation
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened.
  2. Add ground beef or chicken, season with salt and pepper, and cook until browned. Remove from heat and set aside.
  3. In a bowl, mix mashed potatoes, egg, and flour until combined.
  4. Take a portion of the potato mixture, flatten it in your hand, place some of the meat filling in the center, and fold the edges over to seal.
Cooking
  1. Heat oil in a pan over medium heat. Cook the pancakes until golden brown on both sides. Serve hot.

Notes

These pancakes can be served as a main dish or a side. They pair well with sour cream, yogurt, or a side salad. Fresh herbs can be added for garnish.
