- In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened.
- Add ground beef or chicken, season with salt and pepper, and cook until browned. Remove from heat and set aside.
- In a bowl, mix mashed potatoes, egg, and flour until combined.
- Take a portion of the potato mixture, flatten it in your hand, place some of the meat filling in the center, and fold the edges over to seal.
Cooking
- Heat oil in a pan over medium heat. Cook the pancakes until golden brown on both sides. Serve hot.
Notes
These pancakes can be served as a main dish or a side. They pair well with sour cream, yogurt, or a side salad. Fresh herbs can be added for garnish.
