  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned. Remove the meat and set it aside.
  2. In the same pot, add the diced onion, carrots, and celery. Sauté these vegetables until soft.
  3. Add the minced garlic and cook for another minute.
  4. Pour in the chicken broth, diced tomatoes, and Italian seasoning. Bring the mixture to a boil.
  5. Stir in the orzo and the cooked sausage. Lower the heat and let it simmer until the orzo is al dente.
  6. Season the soup with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For added flavor, you can sauté the sausage with some red pepper flakes or add a dash of hot sauce if you like it spicy. Make sure not to overcook the orzo. You can add other vegetables such as spinach or kale for extra nutrition. Adjust the seasoning at the end according to your taste preference.
