- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the French bread cubes with the shredded brisket and crumbled bacon, mixing gently to distribute.
- In a separate bowl, whisk together the milk, heavy cream, eggs, maple syrup, bourbon, vanilla extract, cinnamon, nutmeg, and salt until smooth.
- Pour the custard evenly over the bread mixture, gently stirring to ensure all cubes are well coated.
- Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
- Sprinkle the chopped pecans over the top and bake for 35–40 minutes, or until the custard is set and the top is golden.
- Serve warm with extra maple syrup drizzled on top.
Notes
Make it ahead: assemble the night before and refrigerate; bake in the morning. Swap pecans for walnuts if preferred, and add a pinch of smoked paprika for extra flavor.
