Ingredients
  

Tapioca Mixture
  • 1 cup tapioca pearls Rinsed and soaked
  • 4 cups water For boiling tapioca
Coconut Mixture
  • 2 cups coconut milk Use full-fat for creaminess
  • 1/4 cup sugar Adjust according to taste
  • 1 pinch salt Enhances flavor
Topping
  • 1 ripe mango, diced For topping

Method
 

Preparation
  1. Rinse the tapioca pearls under cold water and let them soak for about 30 minutes.
Cooking Tapioca
  1. In a pot, bring 4 cups of water to a boil.
  2. Add the soaked tapioca pearls and cook on medium heat for about 20 minutes, stirring frequently until the pearls become translucent.
  3. Drain the pearls and rinse them under cold water.
Coconut Mixture
  1. In a saucepan, combine the coconut milk, sugar, and salt, and heat gently until the sugar has dissolved.
Combining
  1. Add the cooked tapioca pearls to the coconut milk mixture and stir well.
Serving
  1. Spoon the mixture into individual bowls and top with fresh diced mango. Enjoy warm or chilled.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Stir well before serving and consider adding more diced mango on top.
