Preparation
- Rinse the tapioca pearls under cold water and let them soak for about 30 minutes.
Cooking Tapioca
- In a pot, bring 4 cups of water to a boil.
- Add the soaked tapioca pearls and cook on medium heat for about 20 minutes, stirring frequently until the pearls become translucent.
- Drain the pearls and rinse them under cold water.
Coconut Mixture
- In a saucepan, combine the coconut milk, sugar, and salt, and heat gently until the sugar has dissolved.
Combining
- Add the cooked tapioca pearls to the coconut milk mixture and stir well.
Serving
- Spoon the mixture into individual bowls and top with fresh diced mango. Enjoy warm or chilled.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Stir well before serving and consider adding more diced mango on top.
