  • 2 cups broccoli florets Fresh or frozen; adjust baking time if using frozen.
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese Feel free to experiment with different cheeses.
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking Use as needed for sautéing.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the chicken breasts, cooking until browned on both sides. Season with salt, pepper, and Italian seasoning.
  4. In a bowl, mix the heavy cream, sun-dried tomatoes, and both cheeses.
Baking
  1. In a baking dish, combine the cooked chicken, broccoli florets, and cream mixture.
  2. Bake for 30-35 minutes until the chicken is cooked through and the mixture is bubbly and golden on top.
  3. Let it cool slightly before serving.

Notes

Pair with a simple green salad or steamed vegetables. Add fresh basil or parsley for extra flavor. Make sure to brown the chicken thoroughly for better flavor. For a spicy kick, add red pepper flakes to the cream mixture. Customizable with other vegetables like spinach or bell peppers, or substitute chicken for chickpeas or tofu.
