Ingredients
  

For the Pickling Brine
  • 1 cup white vinegar
  • 1 cup water
  • 1 tablespoon salt
  • 1 tablespoon sugar substitute (like erythritol) Can substitute with regular sugar but will increase carb count.
  • 1 teaspoon garlic powder
  • 1 teaspoon dill weed
  • 1 teaspoon red pepper flakes (optional) Adjust based on heat preference.
For the Snack
  • 4 cups celery sticks, chopped Cut evenly for consistent pickling.

Method
 

Preparation
  1. In a saucepan, combine the vinegar, water, salt, sugar substitute, garlic powder, dill weed, and red pepper flakes. Bring to a boil.
  2. Remove from heat and let the mixture cool to room temperature.
  3. Place the chopped celery sticks in a jar or airtight container.
  4. Pour the cooled brine over the celery until fully submerged.
  5. Seal the jar and refrigerate for at least 24 hours before consuming.

Notes

Store in an airtight container and ensure celery is fully submerged in brine. This snack lasts up to two weeks.
