- In a saucepan, combine the vinegar, water, salt, sugar substitute, garlic powder, dill weed, and red pepper flakes. Bring to a boil.
- Remove from heat and let the mixture cool to room temperature.
- Place the chopped celery sticks in a jar or airtight container.
- Pour the cooled brine over the celery until fully submerged.
- Seal the jar and refrigerate for at least 24 hours before consuming.
