Method
 

Preparation
  1. Start by washing and cutting the celery stalks into desired lengths.
  2. In a saucepan, combine equal parts vinegar and water, adding salt and optional sugar to taste.
  3. Bring the mixture to a boil, stirring until the salt and sugar dissolve.
  4. Add your choice of spices to the mixture.
  5. Pour the hot pickling liquid over the cut celery in a jar, ensuring it's fully submerged.
  6. Let it cool to room temperature, then seal and refrigerate.
  7. Allow the celery to pickle for at least 24 hours before serving.

Notes

Store pickled celery in the refrigerator in a sealed jar for 2 to 3 weeks. The longer it sits, the more flavorful it will become.
