Preparation
- Start by washing and cutting the celery stalks into desired lengths.
- In a saucepan, combine equal parts vinegar and water, adding salt and optional sugar to taste.
- Bring the mixture to a boil, stirring until the salt and sugar dissolve.
- Add your choice of spices to the mixture.
- Pour the hot pickling liquid over the cut celery in a jar, ensuring it's fully submerged.
- Let it cool to room temperature, then seal and refrigerate.
- Allow the celery to pickle for at least 24 hours before serving.
Notes
Store pickled celery in the refrigerator in a sealed jar for 2 to 3 weeks. The longer it sits, the more flavorful it will become.
