  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese Use fresh for best taste.
  • 1 cup breadcrumbs
  • 2 tablespoons Italian seasoning
  • 2 pieces eggs Beaten.
  • 2 tablespoons olive oil For frying.
  • Salt and pepper to taste
  • Marinara sauce for serving
  • Fresh parsley for garnish

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. In one bowl, mix together the Parmesan cheese, breadcrumbs, Italian seasoning, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken breast into the egg and then coat with the breadcrumb mixture.
Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Cook the chicken for about 3-4 minutes on each side until golden brown.
  3. Transfer the chicken to a baking dish and bake for 20-25 minutes or until cooked through.
Serving
  1. Serve the Parmesan chicken hot, topped with marinara sauce.
  2. Pair it with a side of pasta, a fresh salad, or steamed vegetables for a complete meal.
  3. Don’t forget to sprinkle fresh parsley on top for a nice touch.

Notes

For extra crunch, you can add some panko bread crumbs to the mixture. Marinating the chicken in olive oil and Italian seasoning for a few hours can add more flavor. You can also freeze the cooked chicken for up to 2 months. Just make sure it's in a sealed container or freezer bag.
