  • 1 lb ground beef Can use ground turkey or chicken for a lighter option.
  • 1 packet brown gravy mix Choose gluten-free if needed.
  • 1 can sweet corn, drained Alternatively, use 2 cups frozen corn.
  • 3–4 cups mashed potatoes Homemade or instant.
  • 1–1½ cups shredded cheddar cheese For melting on top.
  • 2 cups water For gravy mix.
  • to taste Salt & pepper Customize to your preference.

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
  2. Stir in the brown gravy packet and 2 cups of water. Simmer for 5–7 minutes until thickened.
  3. Warm your mashed potatoes if needed.
  4. Microwave or heat the corn on the stovetop until warm.
Assembly
  1. Add a scoop of mashed potatoes to a plate or bowl, then top with corn.
  2. Spoon the gravy beef mixture over the corn and potatoes.
  3. Sprinkle shredded cheddar cheese on top while hot so it melts.

Notes

For creamier mashed potatoes, mix in some butter and cream or milk. Feel free to add other vegetables like peas or carrots for extra nutrition and flavor. For a spicier version, sprinkle in some red pepper flakes or add diced jalapeños.
