  • 1 lb Baby potatoes Choose small to medium-sized potatoes for best results.
Filling
  • 4 oz Cream cheese Softened for easier mixing.
  • 1 cup Cheddar cheese Shredded, divided for filling and topping.
  • 1/2 cup Sour cream For creaminess.
  • 3 tbsp Green onions Chopped, for flavor and garnishing.
  • 1/2 cup Bacon bits Can use cooked and crumbled bacon.
  • 1 tsp Salt
  • 1/2 tsp Pepper Adjust to taste.

Method
 

Preparation
  1. Boil the baby potatoes until they are tender.
  2. Drain and let cool slightly.
  3. Cut each potato in half and scoop out some flesh, leaving a little for structure.
Filling
  1. In a mixing bowl, combine the scooped potato flesh, cream cheese, half of the cheddar cheese, sour cream, green onions, bacon bits, salt, and pepper.
  2. Fill each potato half with the mixture.
  3. Top with the remaining cheddar cheese.
Baking
  1. Bake at 375°F (190°C) for 15-20 minutes or until the cheese is bubbly and golden.
  2. Serve warm, garnished with extra green onions or bacon bits if desired.

Notes

For variation, consider adding toppings like diced tomatoes, avocado, or different cheeses. You can also prepare the filling ahead of time for convenience.
