  • 2 lbs baby potatoes, halved Ensure even halves for consistent cooking.
  • 1 cup bacon bits Can substitute with crumbled cooked fresh bacon.
  • 1 cup shredded cheddar cheese Feel free to switch to other cheese varieties.
  • 1/2 cup sour cream Can add more or less to taste.
  • 1 packet ranch seasoning Add to taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place halved baby potatoes on a baking sheet.
  3. Drizzle with olive oil, sprinkle with ranch seasoning, and toss to coat.
Roasting
  1. Roast in the oven for 20-25 minutes until tender and golden.
  2. Remove from oven and top with bacon bits, shredded cheddar cheese, and dollops of sour cream.
  3. Return to the oven for an additional 5 minutes to melt the cheese.
Serving
  1. Serve warm and enjoy!

Notes

Can be served as a side dish or snack. Pair with your favorite dip. Store leftovers in an airtight container in the fridge for 3-4 days. Reheat before serving.
