  • 2 large russet potatoes for baking
  • ½ lb steak, cut into bite-sized cubes seasoned
  • 8 large shrimp, peeled and deveined seasoned
  • 1 cup broccoli florets, steamed
  • 1 cup shredded cheddar cheese
  • ¼ cup heavy cream
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Preparation
  1. Preheat oven to 400°F (200°C). Prick the potatoes with a fork and bake for 45–50 minutes, or until soft and tender inside.
  2. Prepare the steak and shrimp. Season with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the steak cubes for 3–4 minutes until browned and cooked through, then set aside.
  3. In the same skillet, cook the shrimp for 1–2 minutes per side until pink and opaque.
  4. Make the cheddar sauce. In a small saucepan, melt the butter over medium heat. Add the heavy cream and bring to a gentle simmer. Stir in the shredded cheddar cheese until fully melted and smooth.
  5. Assemble the loaded potatoes. Cut open each baked potato and fluff the inside with a fork. Top with steak, shrimp, and steamed broccoli.
  6. Drizzle generously with cheddar sauce and sprinkle with chopped parsley.

Notes

Tip: For a spicier version, substitute the cheddar sauce with spicy queso or add red pepper flakes. It's a customizable dish suitable for gatherings or weeknight dinners.
