- Preheat oven to 400°F (200°C). Prick the potatoes with a fork and bake for 45–50 minutes, or until soft and tender inside.
- Prepare the steak and shrimp. Season with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the steak cubes for 3–4 minutes until browned and cooked through, then set aside.
- In the same skillet, cook the shrimp for 1–2 minutes per side until pink and opaque.
- Make the cheddar sauce. In a small saucepan, melt the butter over medium heat. Add the heavy cream and bring to a gentle simmer. Stir in the shredded cheddar cheese until fully melted and smooth.
- Assemble the loaded potatoes. Cut open each baked potato and fluff the inside with a fork. Top with steak, shrimp, and steamed broccoli.
- Drizzle generously with cheddar sauce and sprinkle with chopped parsley.
