Potato Preparation
  • 4 medium medium potatoes Choose medium potatoes for even cooking.
  • 1 cup shredded cheese (cheddar or your choice) Feel free to mix different cheeses.
  • 1/2 cup cooked bacon, crumbled You can replace with leftover pulled pork.
  • 1/2 cup sour cream Use plant-based sour cream for a vegan option.
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Olive oil Rub on potatoes before cooking.

Cooking
  1. Preheat the air fryer to 400°F (200°C).
  2. Wash the potatoes and pierce them several times with a fork.
  3. Rub the potatoes with olive oil and season with salt and pepper.
  4. Place the potatoes in the air fryer basket and cook for 25-30 minutes, or until tender when pierced with a fork.
  5. Once cooked, carefully cut the potatoes open and fluff the insides with a fork.
  6. Add the shredded cheese, crumbled bacon, and a dollop of sour cream.
  7. Return to the air fryer for another 5 minutes, until the cheese is melted.
  8. Top with chopped green onions and serve warm.

Notes

These loaded potatoes can be served as a side dish with grilled meats or salads. Pair them with extra sour cream or salsa for added flavor. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for a few minutes to restore crispiness.
