Preparation
- Preheat the oven to 325°F (160°C).
- Mix the ground pork and veal in a food processor until smooth.
- Gradually add the crushed ice while mixing.
- Add salt, white pepper, ground coriander, mace, and finely grated onion; blend everything thoroughly.
- Grease a loaf pan with butter and fill it with the meat mixture, smoothing the top evenly.
- Score a cross pattern on the top of the loaf.
Cooking
- Bake for 60–70 minutes, or until the top is browned.
- Let it rest for 10 minutes before slicing.
Notes
Serve warm with mustard and fresh bread. Pairs well with pickles or a simple salad.
