Ingredients
  

Marinade Ingredients
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup white wine, such as pinot grigio Can be replaced with chicken broth
  • 3 tablespoons lemon juice Plus 1 teaspoon zest, divided
  • 1 teaspoon lemon zest Divided
  • 4 cloves garlic, finely minced Divided
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon oregano
  • 2 teaspoons kosher salt Divided
  • 1 teaspoon pepper Divided
Coating Ingredients
  • 2 pounds boneless skinless chicken thighs, cut into 1 1/2 inch pieces
  • 2/3 cup Italian breadcrumbs
  • 2/3 cup panko
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 6 pieces 6-8 inch skewers Wooden skewers should be soaked in water for 30 minutes before using.
  • Cooking spray For spraying skewers
Butter Mixture
  • 4 tablespoons butter
  • 2 teaspoons finely chopped fresh parsley

Method
 

Marinating the Chicken
  1. In a bowl, whisk together the olive oil, white wine, 2 tablespoons of lemon juice, lemon zest, half of the minced garlic, crushed red pepper, oregano, 1 teaspoon salt, and 1/2 teaspoon pepper.
  2. Add the chicken pieces to the bowl and toss them to coat with the marinade. Cover the bowl and refrigerate for 30 minutes to 1 hour.
Preparation
  1. In a shallow dish, mix the remaining salt and pepper with the breadcrumbs, panko, Parmesan cheese, and garlic powder.
  2. Remove the chicken from the marinade and toss it in the breadcrumb mixture, pressing down to make sure the crumbs stick.
  3. Thread the chicken onto the skewers and spray with olive oil cooking spray.
Cooking
  1. Preheat your air fryer to 390°F (198°C).
  2. Air fry the skewers for about 12 minutes, or until the chicken is no longer pink in the center and the juices run clear. The internal temperature should reach 165°F (74°C).
  3. Meanwhile, melt the butter with the remaining garlic in a microwave-safe dish for about 10 seconds. Stir in the remaining lemon juice and parsley. Drizzle this butter mixture over the chicken skewers just before serving.

Notes

You can serve these skewers straight from the air fryer. Pair them with a fresh salad, rice, or grilled vegetables for a complete meal. These chicken skewers can be cut into smaller pieces for serving as appetizers.
