Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In a separate bowl, mix together the cottage cheese, lemon juice, lemon zest, and egg.
- Combine wet ingredients with the dry ingredients until just mixed.
- Turn the dough onto a floured surface and knead gently.
- Roll or pat the dough into about 1-inch thick rounds.
- Place on a lined baking sheet and bake for 15-20 minutes or until golden.
Serving
- Serve these scones warm, straight from the oven, with butter or jam.
