Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet, combine the enchilada sauce, cooked chicken or ground beef, black beans, corn, cumin, chili powder, salt, and pepper.
- Lay a tortilla flat, add a scoop of the filling mixture, sprinkle with cheese, and roll it up.
- Place the rolled tortillas seam side down in a greased baking dish.
- Pour any remaining sauce over the top and sprinkle with additional cheese.
Baking
- Bake for 20-25 minutes until heated through and cheese is bubbling.
