  • 1 can enchilada sauce
  • 2 cups cooked chicken or ground beef
  • 2 cups shredded cheese
  • 8 pieces flour tortillas
  • 1 can black beans, rinsed and drained
  • 1 cup corn (optional) Can be omitted if desired.
Spices and seasonings
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper Adjust according to preference.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, combine the enchilada sauce, cooked chicken or ground beef, black beans, corn, cumin, chili powder, salt, and pepper.
  3. Lay a tortilla flat, add a scoop of the filling mixture, sprinkle with cheese, and roll it up.
  4. Place the rolled tortillas seam side down in a greased baking dish.
  5. Pour any remaining sauce over the top and sprinkle with additional cheese.
Baking
  1. Bake for 20-25 minutes until heated through and cheese is bubbling.

Notes

Serve warm with toppings like sour cream, guacamole, salsa, or chopped green onions. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 2 months.
