Ingredients

  • 1 cup Rice flour Use glutinous rice flour for a chewier texture.
  • 1 cup Coconut milk Fresh coconut milk is preferred for richer flavor.
  • 1/2 cup Sugar Adjust according to taste preference.
  • 2 medium Bananas, mashed Make sure to mash well to avoid lumps.
  • 1/4 teaspoon Salt
  • 2-3 leaves Pandan leaves Used for flavoring; can be left out if unavailable.

Method
 

Preparation
  1. Combine rice flour, sugar, and salt in a bowl.
  2. Gradually add coconut milk to the mixture and stir until smooth.
  3. Incorporate mashed bananas and mix well.
  4. Pour the mixture into a greased baking dish.
Cooking
  1. Steam for about 30-40 minutes or until set.
  2. Check if it's done by inserting a toothpick in the center; if it comes out clean, it’s ready.
Serving
  1. Cool, slice, and serve as a dessert or snack.
  2. Can be served warm or cool, sliced into squares or rectangles.
  3. Delicious with fresh fruits or a drizzle of coconut cream on top.

Notes

Store Kakanin Overload in an airtight container in the refrigerator for up to a week. It can also be frozen; wrap tightly to avoid freezer burn. Thaw in the refrigerator and reheat gently before serving. Variations include adding grated coconut, sweetened mung beans, or other fruits like sweet potatoes or taro.
