Preparation
- Pat the chicken dry with paper towels.
- Place the chicken in a baking tray along with the vegetables.
- In a small bowl, mix together the olive oil, minced garlic, salt, black pepper, and paprika. Rub this mixture all over the chicken until it’s well coated.
Cooking
- Bake the chicken in a preheated oven at 200°C (400°F) for 60–75 minutes.
- Baste the chicken with its own juices halfway through.
- Once done, let the chicken rest for 10 minutes before cutting.
Notes
For best results, ensure the chicken is at room temperature before cooking. Use a meat thermometer to check if the chicken is done; it should reach an internal temperature of 75°C (165°F) in the thickest part. You can also experiment with different vegetables.
