  • 1 lb ground beef Lean ground beef works best.
  • 1 packet taco seasoning Use your favorite brand.
  • 1 cup chopped onions Yellow or white onions recommended.
  • 2 cups chopped bell peppers Mix of red and green for color.
  • 1 can diced tomatoes Use with juice for added moisture.
  • 1 cup corn Canned or frozen corn can be used.
  • 2 cups shredded cheese Cheddar or Tex-Mex blend.
  • 1 cup sour cream Full-fat sour cream recommended.
  • 1 package tortilla chips Choose sturdy chips that can hold layers.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with onions and bell peppers. Drain excess fat.
  3. Stir in taco seasoning, diced tomatoes, and corn, cooking until heated through.
Assembly
  1. In a casserole dish, layer tortilla chips, beef mixture, sour cream, and cheese.
  2. Repeat layers until all ingredients are used, finishing with a layer of cheese on top.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until cheese is bubbly and golden.

Notes

Customize the recipe by adding your favorite vegetables or beans. For a spicier version, add diced jalapeños to the beef mixture. For a crunchier texture, avoid overlayering the tortilla chips.
