Ingredients
  

Pasta and Vegetables
  • 8 ounces rotini pasta Cook according to package instructions.
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup cucumber (diced)
  • 1/4 cup red onion (diced)
  • 1/2 cup black olives (sliced)
  • 1/2 cup mozzarella balls
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the rotini pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red onion, black olives, and mozzarella balls.
  3. In a separate bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  4. Add the cooked pasta to the vegetable mixture.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This pasta salad can be served as a main or side dish. For added flavor, top with fresh basil or parsley before serving. Store leftovers in an airtight container in the refrigerator for up to three days.
