  • 2 lbs 2 lbs (900 g) beef stew meat Tender cuts are preferred for optimal flavor.
  • 1 large 1 large onion, diced Provides sweetness and flavor.
  • 3 cups 3 cups (750 ml) beef broth Use low sodium for better control of salt.
  • 1/4 cup 1/4 cup (60 ml) tomato paste Adds richness to the sauce.
  • 1/4 cup 1/4 cup (30 g) paprika Preferably Hungarian paprika for authenticity.
  • 2 cups 2 cups (250 g) Spätzle German egg noodles that are soft and chewy.
  • to taste Salt and pepper to taste Season according to personal preference.
  • to taste Fresh parsley for garnish Adds freshness to the presentation.

Method
 

Cooking Instructions
  1. Brown the beef and onions in a large pot over medium heat. Stir in the tomato paste and paprika until well mixed.
  2. Add the beef broth to the pot. Cover and let it simmer for 1.5 to 2 hours, or until the meat is tender.
  3. Cook the Spaetzle according to the package instructions while the goulash is cooking.
  4. Serve the goulash hot, with the Spaetzle on the side. Garnish with fresh parsley before serving.

Notes

For extra flavor, add a pinch of caraway seeds or bay leaves while simmering. If you prefer a thicker sauce, allow to simmer uncovered for the last 30 minutes. Taste before serving to adjust seasoning.
