- Brown the beef and onions in a large pot over medium heat. Stir in the tomato paste and paprika until well mixed.
- Add the beef broth to the pot. Cover and let it simmer for 1.5 to 2 hours, or until the meat is tender.
- Cook the Spaetzle according to the package instructions while the goulash is cooking.
- Serve the goulash hot, with the Spaetzle on the side. Garnish with fresh parsley before serving.
Notes
For extra flavor, add a pinch of caraway seeds or bay leaves while simmering. If you prefer a thicker sauce, allow to simmer uncovered for the last 30 minutes. Taste before serving to adjust seasoning.
