  • 1 lb Italian sausage, removed from casing Use hot Italian sausage for a spicier dip.
  • 1 cup beer (lager or ale)
  • 2 cups shredded cheddar cheese Feel free to substitute with your favorite melting cheese.
  • 1 cup shredded mozzarella cheese
  • 1 cup cream cheese, softened Make sure it's at room temperature for easy mixing.
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk Can reduce for a thicker dip.
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and black pepper
  • as needed Tortilla chips or pretzels, for serving

Method
 

Preparation
  1. In a large skillet, cook the Italian sausage over medium heat until browned and crumbled. Drain excess fat and set aside.
  2. In a saucepan over medium heat, warm the beer and whisk in the cream cheese until smooth and melted.
  3. Add cheddar, mozzarella, and Parmesan cheese, stirring until fully melted and creamy.
  4. Stir in milk, flour, Dijon mustard, garlic powder, onion powder, salt, and pepper.
  5. Cook while stirring until the mixture thickens and becomes smooth.
  6. Add the cooked sausage and mix until well combined.
  7. Transfer to a serving dish and serve warm with tortilla chips or pretzels.

Notes

Serve warm in a bowl surrounded by tortilla chips or pretzels. For a lighter option, serve with fresh vegetable sticks. If storing leftovers, allow to cool and transfer to an airtight container. It will last for up to three days in the refrigerator.
