  • 2 large sweet potatoes Peeled and diced
  • 1 lb ground beef or turkey Use your favorite ground meat
  • 1 packet taco seasoning Follow package instructions
  • 1 cup salsa Fresh salsa recommended
  • 1 large avocado Sliced
  • to taste hot honey Adjust for sweetness
  • to taste salt and pepper For seasoning
  • 2 tablespoons olive oil For tossing sweet potatoes

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes, then toss them with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes until tender.
Cooking
  1. In a skillet over medium heat, cook the ground beef or turkey, adding taco seasoning as per package instructions.
Assembly
  1. Once the sweet potatoes are roasted and the taco meat is ready, assemble the bowls by layering the sweet potatoes, seasoned meat, fresh salsa, and slices of avocado.
  2. Drizzle hot honey on top and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or oven until warm. Consider additional toppings like shredded cheese or chopped cilantro.
