Ingredients

For the Salad
  • 4 cups broccoli florets, chopped
  • 2 Honeycrisp apples, thinly sliced
  • ½ cup dried cranberries
  • ¼ cup sunflower seeds
  • ½ cup cooked, crumbled bacon
  • cup thinly sliced red onion
  • ½ cup shredded sharp cheddar cheese
For the Dressing
  • ½ cup mayonnaise
  • ¼ cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Method

Preparation
  1. Start by washing the broccoli thoroughly and cutting it into small bite-sized florets.
  2. Slice the Honeycrisp apples into thin slices or small chunks.
  3. If you want to prevent browning, toss the apples with a few drops of lemon juice.
  4. Prepare the remaining ingredients by slicing the red onion thinly and crumbling the cooked bacon.
Assemble the Salad
  1. In a large mixing bowl, combine the chopped broccoli, sliced apples, dried cranberries, sunflower seeds, crumbled bacon, sliced red onion, and shredded cheddar cheese.
  2. Gently toss everything together so ingredients are evenly distributed.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, and salt and black pepper.
  2. Mix until the dressing is smooth and creamy.
Combine and Chill
  1. Pour the dressing over the salad mixture and toss gently until everything is evenly coated.
  2. Cover the bowl and place the salad in the refrigerator for about 30 minutes.
Serve
  1. Give the salad one last gentle toss before serving. It can be served chilled as a refreshing side dish or light meal.

Notes

Using fresh Honeycrisp apples helps keep the salad crisp and naturally sweet. Letting the salad chill before serving improves both flavor and texture.
