Preparation
- Preheat your oven to 300°F. Line a baking sheet with parchment paper and unwrap all the Rolo candies.
Assembly
- Place 36 mini Nilla Wafer cookies flat side up on the prepared baking sheet, spacing them evenly. Place one unwrapped Rolo candy in the center of each cookie.
Oven Step
- Bake in the 300°F oven for exactly 90 seconds. This softens the Rolo just enough.
Top Layer
- Remove the baking sheet from the oven and quickly place one mini Nilla Wafer flat-side down on top of each Rolo.
Chill
- Transfer to the refrigerator to chill for 15 to 20 minutes until firm.
Melt Chocolate
- Melt the chocolate chips in a double boiler or microwave in 30-second intervals until smooth. Stir in coconut oil if using chocolate chips.
Dip and Coat
- Dip each chilled cookie sandwich into the melted chocolate and tap off excess before placing back on the parchment-lined baking sheet.
Final Chill
- Return dipped bites to the refrigerator until the chocolate coating is completely hardened, approximately 15 to 20 minutes.
Notes
Respect the 90-second rule in the oven for best results. Work quickly after pulling from the oven before the Rolo hardens again. Ensure they are completely chilled before dipping for clean results. Consider using melting wafers for easier coating.
