  • 2 1/2 cups all-purpose flour
  • 1 cup shortening or lard Butter can be used as a substitute.
  • 1/2 cup sugar
  • 1/4 cup ground cinnamon Can experiment with different types for varied flavors.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water or milk Use if needed to form a dough.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
  3. Cut in the shortening or lard until the mixture resembles crumbs.
  4. Gradually add water or milk one tablespoon at a time, mixing until a dough forms.
  5. Roll the dough into small balls and then flatten them slightly.
  6. Place the cookies on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until the edges are lightly golden.
  8. Allow to cool slightly, then roll in cinnamon sugar while still warm.

Notes

Hojarascas are best served warm or at room temperature. Store in an airtight container at room temperature for up to a week or freeze with parchment paper separating layers for longer storage. For added flavor, try incorporating orange or lemon zest into the dough.
