  • 4 cups frozen shredded hash browns, thawed

  • 1.25 cups shredded Swiss cheese

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch casserole dish.
  2. Cook the bacon and onion in a skillet over medium-high heat until the bacon is crispy and the onion is translucent, about 10 minutes. Drain the fat.
  3. Combine all ingredients in a large mixing bowl: the cooked bacon and onion, lightly beaten eggs, thawed hash browns, Cheddar cheese, cottage cheese, and Swiss cheese. Stir until well combined.
  4. Pour the mixture into the prepared casserole dish, smoothing it out evenly.
Baking
  1. Bake uncovered for 45 to 50 minutes, or until the eggs are fully set and the cheese is melted and bubbling.
  2. Rest the casserole for 10 minutes before slicing and serving.

Notes

Make it ahead: Prepare the casserole the night before and refrigerate it covered. Add vegetables like sautéed bell peppers, mushrooms, or spinach for more nutrition. Swap bacon with breakfast sausage for a different flavor. Freeze leftovers in portions for easy future breakfasts.
