Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch casserole dish.
- Cook the bacon and onion in a skillet over medium-high heat until the bacon is crispy and the onion is translucent, about 10 minutes. Drain the fat.
- Combine all ingredients in a large mixing bowl: the cooked bacon and onion, lightly beaten eggs, thawed hash browns, Cheddar cheese, cottage cheese, and Swiss cheese. Stir until well combined.
- Pour the mixture into the prepared casserole dish, smoothing it out evenly.
Baking
- Bake uncovered for 45 to 50 minutes, or until the eggs are fully set and the cheese is melted and bubbling.
- Rest the casserole for 10 minutes before slicing and serving.
Notes
