Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, mix together the flour, sugar, baking soda, and salt.
- Add the crushed pineapple (with its juice), vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
- If using, fold in the chopped walnuts.
- Pour the batter into the prepared pan and smooth the top.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Serve with whipped cream or ice cream for added delight. Store leftover cake in an airtight container for up to 3 days at room temperature; refrigerate for about a week or freeze for up to 3 months.
