  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 cup crushed pineapple (with juice) Use canned crushed pineapple to keep the cake moist.
  • 0.5 cups vegetable oil
  • 4 large eggs Can be substituted with applesauce or flaxseed mixture for egg-free.
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together crushed pineapple (with juice), vegetable oil, eggs, and vanilla.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Pour the batter into the prepared baking pan.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool before serving.

Notes

Best served at room temperature, either plain or with whipped cream. Can serve with vanilla ice cream. Cover leftovers in an airtight container at room temperature for up to three days, refrigerate for longer freshness, or freeze for up to a month.
