Ingredients
  

For the sandwich
  • 4 slices sourdough or Texas toast Your choice of bread
  • 4–6 pieces roasted Hatch chiles, sliced Use freshly roasted for best flavor
  • 1 cup shredded Monterey Jack or Oaxaca cheese Feel free to experiment with different cheeses
  • to taste g Butter for grilling Use unsalted butter for grilling

Method
 

Preparation
  1. Preheat a skillet over medium heat.
  2. Butter one side of each slice of bread.
  3. Place one slice, buttered side down, in the skillet.
  4. Layer with sliced Hatch chiles and shredded cheese.
  5. Top with another slice of bread, buttered side up.
Cooking
  1. Cook until golden brown, then flip and grill the other side until the cheese melts.
Serving
  1. Serve hot and enjoy, optionally with tomato soup for dipping.

Notes

Press down gently on the sandwich while cooking to help the cheese melt evenly. For added flavor, consider fresh herbs or a drizzle of hot sauce.
