Ground Beef and Rice

  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes Fresh tomatoes can be used instead.
  • 1 can (15 oz) kidney beans, drained and rinsed You can replace with black beans or any favorite beans.
  • 1 tablespoon chili powder Adjust spices to taste.
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 2 cups cooked rice
  • as needed Shredded cheese for topping (optional) Sprinkle on top for extra flavor.

Method
 

Preparation
  1. In a large skillet, brown the ground beef over medium heat. Break it up with a spoon as it cooks.
  2. Once the beef is browned, add the chopped onion and minced garlic. Cook until the onion is soft.
  3. Stir in the diced tomatoes, kidney beans, chili powder, cumin, salt, and pepper. Cook for about 10 minutes until everything is heated through.
  4. Serve the beef mixture over cooked rice.
  5. Top with shredded cheese if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for 3 to 4 days. You can also freeze it for up to three months. Just make sure to let it cool completely before freezing. Optionally, add other vegetables like bell peppers or corn to the mix for variation.
