Ingredients

Main Ingredients
  • 1 lb ground pork sausage Can substitute with ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth Can use vegetable broth for vegetarian version
  • 1 can green chiles 10 oz
  • 1 cup heavy cream Can use plant-based alternative for dairy-free version
  • 8 oz pasta (e.g., shells or elbow)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method

Cooking
  1. In a large pot, brown the ground sausage over medium heat.
  2. Add the diced onion and minced garlic, cooking until softened.
  3. Stir in the chicken broth, green chiles, cumin, salt, and pepper. Bring to a simmer.
  4. Add the pasta and cook according to package instructions until al dente.
  5. Reduce the heat and stir in the heavy cream. Adjust seasoning if necessary.
  6. Serve warm, garnished with fresh cilantro.

Notes

For extra flavor, consider adding diced potatoes or corn. For spicier soup, use hot green chiles instead of mild. Store in an airtight container for up to three days in the refrigerator or freeze for up to three months.
