Ingredients
  

Pasta
  • 12 oz bow-tie pasta (farfalle) or any short pasta
Salad Dressing
  • ¼ cup extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano or Italian seasoning
  • ¼ teaspoon salt
  • to taste Freshly ground black pepper
Salad
  • 12 oz cherry or grape tomatoes (halved)
  • 2 medium cucumbers (quartered)
  • 1 medium red bell pepper (diced)
  • cup red onion (chopped)
  • cup black olives (sliced)
  • cup green olives (sliced)
  • 4 oz feta cheese (crumbled)

Method
 

Preparation
  1. Start by bringing a large pot of water to a boil. Add the pasta and cook it according to the package instructions until it reaches an al dente texture.
  2. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process. Drain well and set aside.
Making the Dressing
  1. While the pasta is cooking, prepare the dressing. In a large mixing bowl, combine the olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and black pepper. Whisk everything together until the dressing becomes well combined and slightly thickened.
Mixing the Salad
  1. Next, add the vegetables directly into the bowl with the dressing. Include the halved cherry tomatoes, cucumbers, diced bell pepper, chopped red onion, and sliced olives. Mix well so that all the vegetables are coated with the dressing.
  2. Let them sit for a few minutes to marinate and release their natural juices.
  3. Once the pasta has cooled and drained completely, add it to the bowl along with the crumbled feta cheese. Gently toss everything together until evenly combined.
Serving
  1. Taste the salad and adjust seasoning if needed. You can add more lemon juice, salt, or pepper depending on your preference.
  2. Serve immediately or chill in the refrigerator for a more refreshing flavor.

Notes

For the best texture, cook the pasta until al dente. Rinsing the pasta with cold water after cooking helps keep it firm. You can also add more lemon juice or fresh herbs just before serving for an extra burst of freshness.
