Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced vegetables and cook until they soften, about 3-5 minutes.
- In a bowl, beat the eggs, and then add the milk, salt, and pepper. Mix well.
- Add the cooked vegetables, diced ham, and shredded cheese to the egg mixture. Stir until evenly combined.
- Pour the mixture into a greased baking dish. If desired, sprinkle bread crumbs on top for added texture.
Cooking
- Bake in the preheated oven for about 25-30 minutes, or until the eggs are fully set and the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
Serve warm, cut into squares. Pairs well with a side salad or fresh rolls. Add a dollop of sour cream or a favorite dipping sauce for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to a month.
