  • 2 cups diced ham Use leftover Easter ham for added flavor.
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese Cheddar or your choice.
  • 1 cup diced vegetables Bell peppers, onions, or your favorites.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup bread crumbs Optional for topping.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced vegetables and cook until they soften, about 3-5 minutes.
  3. In a bowl, beat the eggs, and then add the milk, salt, and pepper. Mix well.
  4. Add the cooked vegetables, diced ham, and shredded cheese to the egg mixture. Stir until evenly combined.
  5. Pour the mixture into a greased baking dish. If desired, sprinkle bread crumbs on top for added texture.
Cooking
  1. Bake in the preheated oven for about 25-30 minutes, or until the eggs are fully set and the top is golden brown.
  2. Remove from the oven and let it cool for a few minutes before serving.

Notes

Serve warm, cut into squares. Pairs well with a side salad or fresh rolls. Add a dollop of sour cream or a favorite dipping sauce for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to a month.
