  • 4 cloves garlic, finely chopped or grated Don’t skip the garlic; it adds a wonderful flavor!
  • 1 cup grated cheese (like Parmesan or mozzarella) Experiment with different cheeses for a unique twist.
  • Kosher salt To taste.
  • Olive oil For brushing the zucchini.
  • Black pepper To taste.
  • Fresh herbs (optional, for garnish) Feel free to add different herbs or spices to suit your taste.

Preparation
  1. Preheat your grill or grill pan over medium heat.
  2. Cut the zucchini lengthwise into thick slices, about 1/2 inch thick.
  3. Brush both sides of the zucchini steaks with olive oil and sprinkle with kosher salt and black pepper.
Cooking
  1. Place the zucchini on the grill and cook for 3-4 minutes on each side, until tender and grill marks appear.
  2. In the last minute of cooking, sprinkle the grated cheese over the zucchini steaks and close the grill lid to melt the cheese.
  3. Remove from the grill and sprinkle with fresh herbs if desired.

Notes

If you have leftovers, let the zucchini steaks cool down, then store them in an airtight container in the fridge. They will stay fresh for up to 3 days. To reheat, you can place them in the oven or on a skillet briefly to warm them up without losing their texture.
