Preparation
- Pat the fish fillets dry with a paper towel and season with salt and pepper.
- Dredge each fillet in cornstarch or flour, shaking off any excess.
Cooking
- In a large pan, heat vegetable oil over medium-high heat.
- Add the fish fillets to the pan and sear until golden brown and cooked through, about 4-5 minutes per side. Remove from the pan and keep warm.
- In the same pan, add minced garlic and sliced ginger. Sauté until fragrant.
- Pour in soy sauce, oyster sauce, sugar, and broth. Bring to a simmer and let it reduce slightly.
- Stir in sesame oil, scallions, and chili (if using).
- Serve the fish fillets drizzled with the garlic scallion sauce.
Notes
This dish is best served hot right after cooking. Pair it with steamed rice or noodles, and add sautéed vegetables or a fresh salad for balance. For garnish, sprinkle with scallions or sesame seeds.
