Ginger Lemonade

  • 2.5-3 inches fresh ginger, unpeeled
  • 1 cup freshly squeezed lemon juice
  • 1/3 cup powdered monk fruit sweetener or alternative
  • 4 cups water

Method
 

Preparation
  1. Slice the unpeeled ginger into rounds about 4-5 millimeters thick.
  2. Heat ginger, water, and monk fruit sweetener in a medium-sized saucepan over medium heat, stirring occasionally.
  3. Bring to a gentle simmer.
  4. Turn the heat to low, cover, and leave to infuse for 10-15 minutes.
  5. Remove from heat and leave to infuse for a further 15-30 minutes.
  6. Remove the ginger and add the lemon juice to the saucepan. Give it a gentle stir.
  7. Refrigerate for at least an hour, then serve over ice.
Serving Suggestions
  1. Serve the ginger lemonade over ice in glasses, optionally garnished with fresh mint or lemon slices.

Notes

For a stronger ginger flavor, let it steep longer after removing from heat. If you prefer it sweeter, add more monk fruit sweetener to taste. You can experiment with different sweeteners if monk fruit is unavailable. Consider adding herbs like rosemary or basil for a unique twist, or jalapeƱo slices for a spicy kick.
