Preparation
- Preheat your oven to 400°F (200°C). Prepare a large baking dish by lightly greasing it or lining it with parchment paper.
- Wash the fresh strawberries thoroughly and slice them into small pieces.
- In a mixing bowl, combine the sliced strawberries with the strawberry pie filling. Stir gently to evenly distribute the fruit.
- Roll out one layer of refrigerated pie crust and place it into the bottom of the baking dish, pressing it gently into the corners.
- Spread the strawberry mixture evenly over the bottom crust.
- Take the second pie crust layer and carefully place it over the fruit filling. Press the edges together firmly to seal.
Baking
- Place the baking dish into the oven and bake until the pastry is crispy and golden brown, about 25 minutes.
- Remove the pastry from the oven and allow it to cool slightly before adding the glaze.
Glazing
- To make the icing, mix the powdered sugar and milk together in a small bowl until smooth.
- Drizzle the glaze across the top of the pastry and finish by sprinkling rainbow sprinkles over the icing.
Notes
Keep the pie crust chilled until just before baking for a flaky texture. Avoid overfilling to prevent leaking. Let the pastry cool before glazing.
