Preparation
  1. In a large pot, combine the diced potatoes, onion, carrots, celery, and broth. Bring to a boil and then reduce to a simmer.

  3. If using sausages, add them in and let them cook through.
  4. Use an immersion blender to puree the soup until creamy, or blend in batches.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Serve hot, garnished with fresh herbs.

Notes

This soup pairs well with crusty bread or a simple green salad. For a thinner soup, add more broth or water when blending. Adjust seasoning according to your taste.
