  • 1 medium onion, grated
  • 1 large egg
  • 1/4 cup all-purpose flour

  • Oil for frying
  • Applesauce for serving

Method
 

Preparation
  1. In a mixing bowl, combine grated potatoes, onion, egg, flour, salt, and pepper.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Drop spoonfuls of the potato mixture into the pan and flatten them slightly.
  3. Cook until golden brown and crispy on both sides, about 4-5 minutes per side.
  4. Remove from the pan and drain on paper towels. Serve hot with applesauce.

Notes

For extra crispy pancakes, squeeze out as much liquid from the grated potatoes as possible. Serve with sour cream or a sprinkle of chives for added flavor.
