Ingredients
  

For the crust
  • 250 g digestive biscuits
  • 100 g unsalted butter melted
For the filling
  • 500 g quark room temperature
  • 200 g cream cheese room temperature
  • 150 g sugar adjust to taste
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F).
  2. Crush the digestive biscuits and mix with melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a large bowl, mix the quark, cream cheese, sugar, eggs, vanilla extract, lemon juice, and cornstarch until smooth.
  4. Pour the filling over the crust and smooth the top.
Baking
  1. Bake for 50-60 minutes until set and lightly golden.
  2. Allow to cool, then refrigerate for several hours before serving.

Notes

Serve chilled, plain or with fresh fruits, chocolate sauce, or powdered sugar. Store in the refrigerator for up to 5 days. Adjust sugar to taste for sweetness.
