  • 2 pieces chicken breasts, smashed thin Make sure to smash the chicken breasts thin for even cooking.
  • 2 pieces eggs
  • 1 cup breadcrumbs For extra crunch, try adding some extra breadcrumbs or panko to the coating mixture.
  • 1 packet ranch seasoning Feel free to use your favorite brand or make your own.
  • 1/4 cup grated Parmesan

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Dip each smashed chicken breast in egg, then coat in breadcrumbs mixed with ranch seasoning and Parmesan.
  3. Place the coated chicken on a baking sheet.
Cooking
  1. Bake for 25-30 minutes or until golden and crispy and the chicken is cooked through.
Serving
  1. Serve plain or with your favorite dipping sauce.

Notes

If you have leftovers, store the chicken in an airtight container in the fridge for about 3 days. To reheat, place it in the oven at 350°F (175°C) until warmed through. You can also reheat it in the microwave, but it may not stay as crispy.
