Ingredients
  

For the noodle cups
  • 8 pieces lasagna noodles, cooked Cook until al dente
For the filling
  • 2 cups cooked shredded chicken
  • 1 cup cottage cheese Can substitute with ricotta
  • 1 cup grated Parmesan cheese You can mix in mozzarella for gooey texture
  • 2 cloves garlic, minced
  • 1 cup marinara sauce For drizzling on top
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the cooked shredded chicken, cottage cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper.
  3. Cut the cooked lasagna noodles in half and lay them in muffin tins to form cups.
  4. Fill each noodle cup with the chicken and cheese mixture.
  5. Drizzle marinara sauce over the top of each cup.
Baking
  1. Bake for 20-25 minutes or until bubbly and golden.
  2. Garnish with fresh parsley before serving.

Notes

Serve warm. Pairs well with side salad or garlic bread. Can store leftovers in an airtight container for 3-4 days.
