Preparation
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil, or lightly grease a loaf pan to prevent sticking.
- In a large bowl, combine all meatloaf ingredients. Mix gently with your hands or a spoon until just combined — overmixing can make the loaf dense instead of tender.
- Transfer the mixture to the prepared pan. Shape it into an 8×4-inch loaf, pressing lightly to keep its form while allowing air circulation for even cooking.
- In a small bowl, whisk together the mayonnaise, Parmesan, garlic, Italian herbs, salt, and pepper until smooth. Spread the glaze evenly over the top of the meatloaf.
Baking
- Bake for 45–55 minutes, or until the internal temperature reaches 165°F (74°C). For a crisp, golden finish, broil for an additional 2–3 minutes.
Serving
- Allow the meatloaf to rest for about 10 minutes before slicing. Garnish with a sprinkle of fresh parsley or basil for a pop of color and flavor.
Notes
For a crispier exterior, use a baking sheet; a loaf pan keeps it juicier. Pair it with roasted veggies, mashed potatoes, or a green salad with lemon vinaigrette. Refrigerate leftovers and reheat gently to maintain moisture.
