Ingredients
  

For the Meatloaf
  • 2 lbs ground chicken (93% lean)
  • ¾ cup grated Parmesan cheese
  • ¾ cup breadcrumbs (Italian-style or plain)
  • 2 eggs
  • 4 cloves garlic, minced
  • 1 small onion, grated or finely chopped
  • ¼ cup milk
  • 2 tbsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 2 tsp Italian seasoning
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • Red pepper flakes (optional, to taste)
  • 2 tbsp fresh parsley or basil, chopped
For the Garlic Parmesan Glaze
  • ½ cup mayonnaise (or sour cream)
  • ½ cup shredded Parmesan cheese
  • 1 tbsp garlic paste or 2 cloves, minced
  • 1 tsp Italian herbs
  • Pinch of salt and black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil, or lightly grease a loaf pan to prevent sticking.
  2. In a large bowl, combine all meatloaf ingredients. Mix gently with your hands or a spoon until just combined — overmixing can make the loaf dense instead of tender.
  3. Transfer the mixture to the prepared pan. Shape it into an 8×4-inch loaf, pressing lightly to keep its form while allowing air circulation for even cooking.
  4. In a small bowl, whisk together the mayonnaise, Parmesan, garlic, Italian herbs, salt, and pepper until smooth. Spread the glaze evenly over the top of the meatloaf.
Baking
  1. Bake for 45–55 minutes, or until the internal temperature reaches 165°F (74°C). For a crisp, golden finish, broil for an additional 2–3 minutes.
Serving
  1. Allow the meatloaf to rest for about 10 minutes before slicing. Garnish with a sprinkle of fresh parsley or basil for a pop of color and flavor.

Notes

For a crispier exterior, use a baking sheet; a loaf pan keeps it juicier. Pair it with roasted veggies, mashed potatoes, or a green salad with lemon vinaigrette. Refrigerate leftovers and reheat gently to maintain moisture.
