  • 1 cup cottage cheese, blended smooth Make sure the cottage cheese is well blended for a smoother texture.
  • 2 tbsp honey Adjust sweetness based on preference.
  • 1 tsp vanilla
  • 1 tbsp lemon juice
  • 1.5 cups fresh strawberries, halved Fresh strawberries are recommended for the best flavor.
Topping
  • 3 tbsp crushed graham crackers

Method
 

Preparation
  1. Blend cottage cheese, honey, vanilla, and lemon juice until silky.
  2. Fold in strawberry pieces gently.
  3. Drop spoonfuls onto a parchment-lined baking sheet.
  4. Sprinkle crushed graham crackers over each cluster.
  5. Freeze for at least 3 hours until completely solid.
  6. Pop off the parchment and enjoy straight from the freezer.

Notes

Store in an airtight freezer bag for up to 2 weeks. Label the bag with the date. You can substitute with bananas or blueberries or use flavored cottage cheese for variety.
