  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup shredded cheddar cheese
  • 1 cup ranch dressing Consider using flavored ranch dressing for added taste
  • 1/4 cup cilantro, chopped Fold in just before serving

Preparation
  1. In a large bowl, combine the corn, black beans, red bell pepper, cherry tomatoes, red onion, and cheddar cheese.
  2. Pour in the ranch dressing and mix well.
  3. Just before serving, fold in the Fritos corn chips and cilantro.

Notes

Ideal as a side dish or light meal, serve chilled for enhanced flavors. Store in an airtight container in the refrigerator for 3 to 5 days. Avoid adding Fritos until just before serving to keep their crunch. Customize with additional ingredients like jalapeƱos or different cheeses for variation.
